Happy Summer! Warm days and soaring temperatures always put me in the mood for lemonade. For a little end of the year gift for my sons’ teachers I whipped up a small batch of DIY Lemonade lip balm. But, this is a fabulous gift to make for a girlfriend or anyone who needs a little ray of sunshine. Hi there! I’m back this month with a fun summer recipe that’s just as healthy as it is delicious-grilled fruit kabobs with coconut honey dip! While fruit kabobs are nothing new, taking them to the grill adds an extra special flavor that’s perfectly complimented by a creamy yogurt dip sweetened by honey and coconut!

Ingredients:

  • fruit of choice
  • 3/4 cup lowfat vanilla Greek yogurt
  • 3 tbsp honey
  • 3 tbsp shredded sweetened coconut

Instructions:

Chop fruit into approximately 1″ pieces. You can choose any kind of fruit you prefer. I used watermelon, cantaloupe, pineapple, banana, and strawberries but some other great options are peaches, plums or mango! Read more

Easy Strawberry Tart Recipe

Hi there, I’m back this month to share an easy strawberry tart recipe! In our neck of the woods it’s prime strawberry picking time and I’m always experimenting with new strawberry recipes. This tart is not only delicious but it’s so easy I let my 5 year old help make it!

Ingredients:

  • 1 sheet puff pastry, thawed
  • Butter or margarine for greasing pan
  • 1/2 pint strawberries, sliced
  • 1 tbsp sugar
  • 2 tbsp powdered sugar
  • Whipped cream (optional)

Directions:

Preheat your oven to 350 degrees.

Using a brush or paper towel grease the bottom of a cookie sheet with butter or margarine.

Unroll thawed puff pastry on the cookie sheet.

Fill the pastry with sliced strawberries leaving a 1 inch border on the outer edges.

Fold two opposite sides of the pastry inward creating a lip next to the strawberries.

Fold the remaining edges inward and pinch at the corners.

Sprinkle with granulated sugar and bake on the middle rack for 15-20 minutes or until pastry is golden.

Sprinkle with powdered sugar and serve with whipped cream if desired.

Easy Strawberry Tart Recipe

White Chocolate Cookie bar recipe

Last month we got snowed in here in North Carolina-a whopping 3 whole inches. The day before the snow came I did what every good Southerner does before a snowstorm and stocked up excessively on my milk, bread and eggs.

While I was at the store I thought to myself, if I’m going to be stuck inside with my three boys for a day or two I might as well try a few of those recipes I’ve been storing in the back of my mind.  I loaded up my cart with baking supplies and spent two days testing new recipes. This recipe, for White Chocolate Cookie Bars, was a huge hit with my boys and neighbors and I’m very excited to share it with you today!!

Ingredients:

1 box yellow cake mix
1 box instant white chocolate pudding mix
1/4 cup water
3/4 cup vegetable oil
2 eggs
1 cup +1/2 cup white chocolate chips

Directions:

  • Preheat oven to 350 degrees.
  • In a large bowl mix cake mix, pudding mix, water, oil, and eggs until well blended.
  • Add in one cup of chocolate chips and combine.
  • Spread mixture in a greased 9×13 baking pan and sprinkle top with remaining 1/2 cup chocolate chips.
  • Bake 25-30 minute until golden brown.
  • Allow to cool before cutting. Makes about 20 bars.
