Peanut Butter Pumpkin Dip Recipe
Hey there, it’s Melissa from The Happier Homemaker back again and I have something I think you’re going to love this month. I love to cook and I especially love creating fun new recipes in the fall-everything about autumn is so inspiring!
It seems that when September rolls around I start trying to add pumpkin to everything-like my Skinny Pumpkin Spice Latte or Pumpkin Pie Pancakes! This tasty fruit dip is the perfect combination of pumpkin flavor with classic peanut butter satisfaction. Serve this peanut butter pumpkin dip with sliced fruit, cinnamon sugar chips, or spread on a muffin or toast for a perfect fall treat.
Ingredients:
- 1/2 can pumpkin puree (NOT pumpkin pie filling)
- 1/2 cup vanilla Greek yogurt
- 1 tsp vanilla extract
- 1 tsp pumpkin pie seasoning
- 1/4 cup packed brown sugar
- 1/4 cup smooth peanut butter
Directions:
In a small saucepan heat pumpkin puree and brown sugar over medium heat, stirring constantly, until blended (about 4 minutes). Remove from heat. Allow to cool 5 minutes then add yogurt, pumpkin pie seasoning, vanilla and peanut butter. Blend in a food processor, blender, or mixer until uniform. Refrigerator dip for at least one hour prior to serving.
Serve this up for a healthy snack when friends come over. Or whip it up for a quick bite to eat on your way to after school activities.
